The latest sweet tooth craze is taking everyone back to his or her childhood. Cupcakes are sweet, delicious and bite-sized, so eating one (or two) does not seem like falling off the diet wagon. The craze has gone from children’s birthday parties to the mainstream. Cupcakes are downright artistic at times, with designs and concepts that look so good it is almost (almost …) a shame to eat them. Here is a look at some of PalmBeachillustrated.com’s favorite cupcakes from around the area (in no particular order), and the reason we hit the treadmill an extra five minutes at the gym.

On April 22nd, Earth Day, Whole Foods Market Wellington will be donating 5% of the day’s net sales to the Sierra Club and their Inner City Outings program as well as their Elaine Usherson Environmental Youth Scholarships Program.  These programs give inner city and at risk youth the opportunity to learn about nature in the outdoors with Sierra Club trained volunteers at no cost to the families.  In honor of Earth Day and 5% Day there will be activities throughout the day:

            8:00am First 100 Customers to receive a free canvas bag!

            8:00am-10:00pm- Sierra Club information table with Children’s Eco-Game and Prizes

1:00-2:00pm – Guest Chef, Ursula Rafer from Sierra Club, will be teaching us how to make delicious Key Lime Cupcakes that are vegan, gluten free, and no sugar added as well as a Citrus Salad! Pre-register by calling customer service 561-904-4000.

5:00pm- Inner City Outings camping demonstration in the back of the café.

 Time to Speak Up…

Here is the story; the City of Lake Worth is helping us fight Palm Beach County Government.  Namely Commissioner Joanne Golden is advocating for small business against unethical charges, and misapplied fees being put to small businesses.  Mayor Varela in support of the small businesses has drafted a letter to Palm Beach County, asking them to reconsider these “fees” and also feels they are being misapplied.  We all must respond to this, it is vital because…where does it end?

Career: Owner and baker for Chef Divine Dining, Home of the Cupcake Chef

Family: Husband, Sheridan Rafer

Cause: The Loxahatchee Group, one of southeast Florida’s 17 Sierra Club chapters. The 3,000-member group, comprised of Martin, Palm Beach, St. Lucie and Okeechobee residents, meets monthly and provides a variety of ways for members to become active and involved environmentalists.

Q. Describe your volunteer role.

A. I have been a member of the Sierra Club since 2006 and an executive committee board member since 2008. My role on the board is to help generate new membership in Florida.

Q. How did you choose this organization?

A. My father is a plant pathologist. He taught me the importance of protecting nature. My hope is that one day my children will enjoy the parks, beaches and natural areas as I do now.

Q. Why do you volunteer?

A. I have been volunteering since childhood. Both my mother and father taught my siblings and me to give back to our communities through our gifts and passions.

Q. What community involvement opportunities does the Loxahatchee Group offer?

A. Each year, our local chapter campaigns to keep our preserves and wildlife safe, sets up and runs educational booths and tables at local events, runs an Inner City Outings program to teach children about animals and the environment, offers an annual scholarship to one Florida Atlantic University student, as well as many other wonderful outdoor activities designed to help us appreciate our sunny Florida lives.

Q. What projects is this organization working on?

A. During our annual holiday party this year, we raffled donated items from many local green businesses to raise money for the Elaine Usherson Environmental Scholarship Fund, the Inner City Outings program and conservation efforts. Shelia Calderon and Kay Gates, our party committee chairs, worked tirelessly on this event. Whole Foods of Wellington and Palm Beach Gardens donated all the food. Everyone had a great time while raising money for these worthy causes at the same time.

Q. Aside from money, what does your organization need?

A. We are looking for volunteers to help with our Inner City Outings program. After training, volunteers help organize and facilitate the outings with the children. It’s a really fun program and a great way to get involved.

Ursula Gatti Rafer was born on January 21, 1979 in Baton Rouge, Louisiana. . . the place of home-cooking! At the age of 18 years old, she attended culinary school and focused on her pastry classes. While working in several well known restaurants, she learned many styles of cooking and becamursula avatare an expert in French-Creole cuisine. In 1996, Ursula moved to Boca Raton, Florida to be closer to her father, John Gatti, Jr. In Florida she continued to expand on her knowledge of cooking and its many different styles. She is certified through the national registry of food safety managers and is a member of the United States Personal Chef Association (USPCA). In addition to her love for cooking, she has two additional favorite pastimes: yoga and art. Both she and her husband Sheridan Rafer (cpts, acsm-hfs, nsca-cpt) owner of Personalize Your Fitness are dedicated to improving the lives of others through good nutrtion and exercise. By 2006, Ursula began the catering business Divine Dining L.L.C. Ursula has shared her passion for creating edible masterpieces with several students and feels that people are unnecessarily intimidated by food, so she encourages her students to experiment with spices and taste new things. By combining her love for cooking and artwork, she has created many amazing meals and desserts that weren’t only delicious, but were also pieces of art! 2009 Ursula opened Cupcakechef.com – an online bakery that sells beautiful assortments of baked goods to fit any and all diet rescrictions.
