Getting to your 50th birthday is not only a milestone in ones life but also quite an accomplishment. So, for Hope’s 50th birthday, she wanted all of her guests to come as dressed in “hippie attire”. It seemed to me that all in attendance got the message loud and clear, because I think I saw everyone dressed to the max in retro gear!

Enough about that though. Let’s get to the part where I talk about the food! Let’s face it, that’s what we all want to hear about anyway, right? To me, that’s the best part of any party. The food. Period. So, keeping in mind that all of the food needed to be Organic, we created a menu that pleased all of the hippie palates there.

The guests were greeted with a tray of lightly grilled french baguette slices topped with fresh goat cheese and a warm Mushroom Ragout. We also had the wait-staff carrying around trays of fresh eared Bay Scallops over oven roasted Butternut Squash tossed with fresh Sage and Extra Virgin Olive Oil. To top off the appetizers, we had Ursula’s famous Spicy Chicken & Sausage Jambalaya shooter, which is always a crowd favorite!

As for the buffet, two different proteins were served. We chose to serve Jerk marinated Organic Free Range Chicken Breasts and Wild Alaskan Salmon. To accompany the proteins we decided to go with a Roasted Pineapple Salsa, which was light and citrusy to compliment the Jerk marinade. The side dishes included a Jicama & Bartlett Pear Slaw, Vegetarian Black Beans and Tie Dyed Jalapeno Corn Muffins. Each side dish was created to balance the wonderful flavor from the marinade and to highlight the free range chicken and wild salmon. As the guests helped themselves to the buffet, you couldn’t help but overhear the “wow’s” being shared. We all knew the party was a true success.

Aroma-Coasters Scented Mug Coasters

These scented coasters are simple to make, and add a fun touch to any party or gathering where you are serving hot drinks! Each time a warm mug is placed on a coaster, your guests will soon enjoy the aroma of your chosen essential oil or blend hidden inside!
These coasters also make a fun way to share your favorite holiday oil or blend in an inexpensive gift.

Materials Needed:

  1. Wood Circle or Shape: Many craft stores sell pre-cut wood circles and other shapes, or you can cut your own out of 1/8″ thick wood or plywood. The diameter of the shape needs to be between about 3″ to 3-1/2″ wide to be able to hold a typical mug. The wood shape helps keep any moisture off of the table.
  2. Felt: Available at many craft or fabric stores. The felt is used to give color to the coaster, and also to hide the pad holding the essential oil.
  3. Battery Operated Diffuser Aroma Pad: These thin pads hold the essential oil inside the coaster.
  4. Essential Oils: Used to give your coasters a unique aroma. About 6-10 drops are needed for each coaster, depending on how strong the aroma is.
  5. Other Materials: Sharp fabric scissors (to cut the felt); glue (white school glue works well).
Instructions:
  • Trace the wooden shape twice on a piece of felt. Cut out the shapes you traced on the felt.
  • On the first felt shape, trace around the square Aroma Pad. Cut the square out of the felt shape.
  • Spread glue over the entire top surface of the wood shape. Place the first felt shape and aroma pad on top of the wood shape and press down firmly.
  • In the second felt shape, cut a small hole that will go over about the center of the aroma pad. Spread glue over the top of the first felt shape (do not put glue on the top of the aroma pad) and glue the second felt shape to the top of the first felt shape.
  • Cut shapes out of different colored felt (or other material) to decorate your coaster (if desired). Glue your decorations onto the coaster. If you use one of the decorations to cover the small hole in the second felt shape, be sure to only glue it on one side. This will allow you to lift that decoration to access the aroma pad.
  • Finish decorating with paint, markers, glitter, etc.
  • To use the coaster, drip 6-10 drops of your desired essential oil or blend through the small hole onto the aroma pad, pausing between every few drops to allow the oil to soak into the aroma pad. Place a warm mug on the coaster to enhance the aroma.
  • If the scent begins to fade after a while, recharge the aroma pad with a few more drops of oil.
Extra Ideas:
  • Make fun gifts by placing Aroma-Coasters in plastic bags along with small vials of essential oil or blend to re-charge the coasters. Create a header-card to go on top with the scent used, and instructions on how to use the coasters. Include more information on other ways the included oil or blend can be used if desired.
  • Create a gift-set with multiple coasters, mugs, and hot-drink mix in a gift basket.

HANDS: Haitian Assistance Now Direct & Simple is organized to gather specific supplies for the small town of Verrettes.

Marceline Fleurilus will travel to Haiti in July. They are collecting hygiene items, school supplies and oat meal, yes oat meal, for her trip. Personally, I would like to help collect tons of toothpaste – 100 tubes.

We had such a great time helping Allie and her family put together her Neon Bat Mitzvah!! All of her neon decorations, especially the glow sticks where a huge hit with the guests and people enjoyed looking through all Allie's photo memories:).  It was our pleasure to be part of such a blessed occasion. 

The Brunch menu had it all from Blood Orange Glazed Salmon Squares to Mac N Cheese Balls.  We even designed a special White Chocolate Cupcake Tower with Chocolate A s on top.  

Allie's Torah portion was beautifully moving and her singing voice was most impressive too. Congratulations Allie Everyone is very proud of ya!!!

Saturday we provided HEALTHY CUPCAKES for BREAKFAST at the 1st Annual DBFF/Surf Rider Foundation Beach Clean up.

It was so great to see families with kids of all ages come out to Delray Beach to help keep our beach beautiful.  Surf Rider and  Sierra Club  had education booths were people could join and donate to protect our planet and Uppercrust Catering gave out yummy scones at table next to CupcakeChef. We sampled Vanilla Bean, Chai and our newest flavor SARAH'S Spring(Punch cupcakes with tangerine frosting and edible pansies).   A great time was had by all.

On April 22nd, Earth Day, Whole Foods Market Wellington will be donating 5% of the day’s net sales to the Sierra Club and their Inner City Outings program as well as their Elaine Usherson Environmental Youth Scholarships Program.  These programs give inner city and at risk youth the opportunity to learn about nature in the outdoors with Sierra Club trained volunteers at no cost to the families.  In honor of Earth Day and 5% Day there will be activities throughout the day:

What's in those pre-made ravioli we buy?  How much sodium? How much fat?  Are they made with real cheese or fresh herbs?

Quit the guess work…learn to make your own…it is simple!!!  And knowing what's in your food is essential to keeping up a healthy lifestyle.

Puree 1 can Navy beans and Mix 1/2 tub marscapone cheese with 3 gloves of fresh minced garlic, 1/4 cup shredded 2 years aged parmesan and 1 bunch chiffonade of basil.

Spoon mixture into wonton squares, brush edges with water and pinch shut.

Ya can freeze these in layers with parchment in between for up to 3 months.

Boil in water or brush with grape seed oil broil. Enjoy with fresh tomato sauce or alone.

 Time to Speak Up…

Here is the story; the City of Lake Worth is helping us fight Palm Beach County Government.  Namely Commissioner Joanne Golden is advocating for small business against unethical charges, and misapplied fees being put to small businesses.  Mayor Varela in support of the small businesses has drafted a letter to Palm Beach County, asking them to reconsider these “fees” and also feels they are being misapplied.  We all must respond to this, it is vital because…where does it end?

Over 300 people came together Thursday night at The Ride for Hope Charity Event to raise funds for injured riders.  It was a great party.   Not bidding on the BREES jersey is my only regret :( lol…WHO DAT!

The Menu:  Roast/Chilled Mixed Veggie Trays Served with Blueberry or Thai Pepper Vinaigrettes, Marinated Manchego Cheese, Cheddar with Balsamic Glaze, and Many other delicious Cheese selections, Toasted/Spiced Walnuts, Fresh Fruit, and Crackers, Hummus and Whole Wheat Pitas, Veggie Sushi, Chicken Jambalaya, Feta Salad, And a Spectacular Cupcake Tower with Choco Choco and Vanilla Bean Vegan, Gluten Free and No Sugar Added Babycakes.
