What the Cupcake??? LOL

Last night was our 5th?? (I think) Cupcake Chef Meeting at Casa Maya in Deerfield Beach:)  I promise to do a non-Mexican food meeting soon, Judy:) In another life I certainly owned a Tacorita joint…lol.  At any rate our staff has been working many hours and nights to make the mission of saving the world one cupcake at time come true…And I thank them!! As for the silly staff questionaires…well they are for me to create surprises later:)  And so we can all know one another better…so here is mine:)  Stay Tuned to the posts this week for the anouncement and pics of the newest line of cakes…Inspired by Alice in Wonderland (more…)

Sarah Siebert – Assistant to the Cupcake Chef and Cupcake Chef Family Event Planner

Sarah Siebert was born March 28th, 1990 in York, Pennsylvania. At the age of 11 her family moved down to Boca Raton, Florida where she developed her love for the event business. Sarah’s first experience with event planing came at the age of 15 when she coordinated and ran her parents 25th wedding anniversary. For the next 4 years Sarah worked with an event planner and florist based in Lakeworth, Florida. Sarah is currently enrolled as a full-time student at Florida Atlantic University where she is pursuing a Public Communications degree along with a minor in Photography, one of Sarahs other loves. In addition to school, Sarah is working as Assistant to the Cupcake Chef and learning all she can about the catering and cooking aspects of the event industry and loving every second of it. Once Sarah graduates college she plans to go full-force into where ever God leads her in this industry.

Crispy Fried Onion Strings Alas…how does one get crispy and not greasy onions?

Ingredients

Pancake Batter mix (Buckwheat…Rocks)

Spanish onions (fine julienne slices)

Monterey Steak Seasoning (optional…can be S&P only)

Toss julienne onion in dry mix…deep fry 350 part olive/grape seed…til golden…Create drying station with cookie  cooling rack and paper towels:)

Thursday Taco Dogs

Try these delicious Taco Dogs …

Ingredients

French Baguette (sliced open and toasted lightly)

100% Beef Nitrate Free Hot dogs (tofu dogs…other) Split down the center pan seared crispy

Shredded Monterey Jack and Cheddar

Avocado (smashed with a lil kosher salt) or Guacamole

Romaine lettuce leaf

1 tbs light sour cream mixed with 1/2 tbs enchilada sauce or salsa verde

BREAD, CHEESES, SOUR CREAM SAUCE, LETTUCE LEAF, HOTDOG, AVOCADO SPREAD, ONION STRINGS…
