Cupcake chef debuts Alice in Wonderland cupcakes

Rafer, a self-trained chef from Louisiana, will be making available gluten-free natural sugar cupcakes like the Cheshire Cherry Berry Cupcake, the White Chocolate Rabbit Cupcake, Apple Blueberry Dumpling Alice Cupcake, the Mad Hatter Marshmallow Cupcake and the Wondermelon Wonderland Cupcake.
“When I say natural sugar, that’s sugar from the fruits I’m using,” Rafer said.
Rafer bakes the cupcakes at Miele Gallery at 7680 N. Federal Highway in Boca Raton. She teaches cooking classes when not making the gluten-free, vegan desserts, all made with fruit and no-added sugar. Rafer said she started making the cupcakes for her husband.
“I would try them out on him. He really liked them. If he had a puzzled look on his face I’d just add more fruit or natural taste,” Rafer said, and added that she also used tofu in some of the creations.
“Flax seeds, hazelnut flour, tofu, soy and fresh fruit, those are all items I used.”
She said the cupcakes are perfect for bridal showers, events of any size or just to have around the home.
They cost between $18 and $36 a dozen.
